Mango Acai Pitaya Bowl

Isn't it unbelievable what nature has for colors? I love it! It was a lot of fun to create this bowl and it tastes delicious. You can offer it for breakfast or as an afternoon snack. When my little one (1 year old at the time) was not yet at kindergarten, I often made such colorful, nutritious smoothie bowls after his nap. They hydrate well, are packed with good ingredients and put him in a great mood. I firmly believe that a good mood depends on good food and good exercise. It is not without reason that the old wise saying goes "A healthy mind lives in a healthy body". Of course, other things count, but a lot of good is done with good food. :)

Some say ‘pitahaya’ or ‘pitaya’; others ;dragon fruit;. The outer color is pink or yellow. The pink dragon fruit has either white or pink pulp. To dye something really pink, we need the one with the pink pulp.

Fills 2 bellies!

PINK – DRAGON FRUIT LAYER

  • 1 pack (100g) frozen pink pitaya (e.g. Fine Fruits)

  • 1/2 pack (125g) curd

    > or 2 frozen bananas and a splash of milk on very hot mornings

YELLOW – MANGO LAYER

  • 1 pack (100g) frozen mangos (e.g. Fine Fruits)

  • 1/2 pack (125g) curd

    > or 2 frozen bananas and a splash of milk on very hot mornings

PURPLE – ACAI BLUEBERREY LAYER

  • 1 pack (100g) frozen acai (e.g. Fine Fruits)

  • 1 cup frozen blueberries

  • 1 frozen banana

  • 1 ripe banana

TOPPINGS

  • 4 fresh strawberries

  • 12 fresh blueberries

  • 1 kiwi

  • 1 tsp raw cacao nibs (e.g. TerraSana Raw Bio Superfood)

  • 1 tbsp coconut flakes

METHOD

  1. First prepare the toppings and get your plate (approx. 20cm in diameter).

  2. Then add the ingredients for each color layer separately in your high-speed blender or food processor and mix everything well.

  3. Keep the finished layers in the freezer on hot summer days. Rinse the blender with cold water after each color.

  4. After you have finished all 3 color layers separately, let them run into each other on your plate as shown in the food picture above. Purple can then be drawn into the yellow with a fork.

  5. Finally, decorate the smoothie bowl creatively with all toppings.
