Acai is one of the most delicious superfoods and it is ideal for Nicecreams. You can buy it either as a frozen puree, which I normally do, or as a powder. It comes from the acai berry in Brazil and is famous for its incredibly high content of antioxidants and vitamin E, which is important for beautiful skin. The berry is filled with many essential fatty acids. In combination with chocolate, it's such a filling nutritious bowl. I always have the ingredients to hand, and it's made in no time. Just how I like it.
Ingredients – ACAI
1 pack frozen acai puree (100g, e.g. from Fine Fruits in your organic food store)
1 cup frozen blueberries
2 frozen bananas
3 tbsp plant-based milk (e.g. oat or rice milk)
Ingredients – Chocolate
4 frozen bananas
1 handful blueberries
2 Medjool dates, pitted
2 tsp raw cocoa powder
A dash of plant-based milk
2 tsp raw cocoa nibs
Toppings
1 tbsp raw cacao nibs
250g fresh blueberries (freeze fresh ones for at least 4 hours)
1 handful coconut flakes
1 tsp chopped almonds
1 tsp sunflower seeds
tsp pumpkin seeds
Method
Blend all ingredients for each layer separately in your blender until they are creamy, except for the cocoa nibs in the chocolate cream. Once the chocolate cream is done, add the cacao nibs and blend for 30 seconds – so that they stay crispy.
Add your toppings – enjoy!
