Strawberry Pineapple Nicecream

Baby pineapples are great as bowls. This strawberry Nicecream is incredibly creamy and refreshing and perfect for a hot day. Strawberries are juicy and sweet. They're an excellent source of vitamin C and manganese, and also contain decent amounts of folate and potassium. Create some great childhood memories with them!

Ingredients

  • 2 handfuls frozen strawberries

  • 2 frozen bananas, peeled and sliced

  • 1 handful of cashews

  • 1 tbsp coconut milk (or Greek yogurt)

  • Spooned out pineapple

TOPPINGS

  • 8 frozen blueberries (freeze fresh ones yourself!)

  • Sprinkling of raw chocolate nibs

  • Sprinkling of chopped almonds

  • 1 tsp desiccated coconut

Method

  1. Halve the pineapple and make a hole in each half with a spoon, but leave a little off the edges.

  2. Place the bananas, pineapples, cashew nuts and coconut milk in your blender and mix everything well. Add a dash of plant-based milk if it's too sticky. Or wait a few minutes for the fruits to thaw. 

  3. Then add the strawberries and mix only so far that you can still see some of the light color.

  4. Pour the mixture into your pineapple halves and sprinkle the toppings over them.
