Coconut Raspberry Popsicle

Young kids adore little popsicles. These mixed berry pops are creamy and refreshing and ideal for warm summer days. It’s an easy recipe and they always turn out perfectly. You can mix it up by changing the fruit. Coconut milk contains a high proportion of saturated fatty acids and is therefore very high in good calories. The milk is also rich in vitamins and minerals. 

Ingredients

  • 1 can coconut milk (400ml)

  • 60g desiccated coconut

  • 1 tbsp rice syrup

  • 1 cup (200g) raspberries

Method

  1. Stir coconut milk, desiccated coconut and rice syrup in a medium bowl.

  2. Add berries and fold in.

  3. Pour the cream into one or more large ice containers and freeze for at least 4 hours.
